Banana Bread

This is a super easy recipe and a firm favourite in the office, and with the extra additions of the chewy caramel pieces it feels very like a real treat! The hard sweets will go soft when the bread is hot, otherwise they will be chewy, whereas the soft ones will be sticky the whole time – its personal preference!

Ingredients

140g softened butter plus extra for the tin

140g caster sugar

2 large beaten eggs

140g self-raising flour

1 teaspoon baking powder

3 very ripe mashed bananas

20 ‘Werthers Original’ sweets (butter candies or creamy filling)

Method

  1. Heat the oven to 180C/160C fan/gas 4.
  2. Butter a loaf tin, and then line with baking parchment.
  3. Cream the butter and caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the flour.
  4. Fold in the remaining flour, 1 tsp baking powder and the mashed bananas and the sweets.
  5. Pour in to the tin, and bake for around 30 minutes, or until a skewer comes out clean.
  6. Cool in the tin for 10 minutes, and then pop out on to a rack. Enjoy!
