Fluffy Pancakes

Ingredients

Serves 4

4 Free Range Eggs

160g Plain Flour

1 Tsp Baking Powder

180mls Whole Organic Milk

Knob of Butter

Toppings of your choice – we like blueberries, raspberries, banana slices or chocolate chips, maple syrup….the list is endless!

Method

1. Preheat your oven to 150 degrees. Separate the egg, putting the white and yolk in separate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
2. Beat the egg white and a pinch of salt with an electric whisk until fluffy and holding its shape. Gently fold the egg white into the yolk paste mixture. Be extra careful not to knock any of the air out.
3. Heat a bit of your knob of butter in a very hot non-stick frying pan. Ensure your pan is very hot, so it helps seal the edges. Dollop a ladle of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Pop it on a baking tray and in your warm oven whilst you repeat with the remaining mixture to make the rest of the pancakes.
4. Plate up and serve with your toppings
